Popovers (gluten-free)

Well aren’t I just Suzie Homemaker, lol. Look what I’m making,

4 large eggs
3 Tbsp melted margarine
1 1/4 cup rice milk, luke warm
1 cup gluten free flour
1/4 tsp xanthan gum
1/2 tsp salt

Preheat oven 400 degrees grease 12 cupcake spots.
Mix together, it will be runny
Pour into pan slots filing just 2/3
Bake 25 minutes, than reduce to 350 degrees for an additional 15 minutes. Till deep brown. Let sit for 5 minutes serve immediately.
