Sugar cookies (gluten-free)

My house smells yummy!!
1 stick margarine room temp
1 c sugar
1 large egg
1 tsp pure vanilla extract
2 cups gluten free flour
1 tsp xanthan gum
1/2 tsp baking powder
1/4 tsp salt

Mix together until thick and smooth. Divide into two equal parts. Wrap in plastic wrap and put in fridge for one hour. To firm.
One properly chilled, preheat oven to 350 degrees
Wrap with plastic and roll dough out. You need to cause its really sticky. Roll, flip over roll out. Till its 1/4 in thick. You must spray your pan with non stick spray or you’ll never get your cookies!
I used cookie cutters! First time ever!!
If the dough gets soft place the tray with cut out cookies or unused dough in freezer for 5 minutes
Cook for 7-12 minutes shorter for chewier cookies and longer for crunchy. Let cool for 5 minutes then remove and put on wire racks
