Strawberry fruit leathers (sugar-free)
This is simple, yet time consuming. But you’ll have preservative free fruit roll ups!!
1 1/2 cups strawberries, cleaned and hulled
1/3 cup stevia OR 2-4 Tbsp honey
2 Tbsp lemon juice
Blend berries until they are smooth.
Pour thru a strainer if you want the seeds removed, I don’t care so I skipped this step.
Than pour into a saucepan. Cook medium/ high until it bubbles up
Than turn it down to medium/ low stirring it the whole time. On and off, for 15-20 minutes or until it turns into about 2 cups
Preheat oven to 170 degrees
Pour onto a flat baking pan lined with parchment paper. Pour a square outline than slowly fill in the square.
Make sure its even
Place in the middle of the oven for 5 hours. Mine were still not solid after. My finger mushed thru so I turned the oven up to 200 degrees for 2 more hours. If its still a little gooey after that keep it in the oven and check on it every 10 minutes. You dont want to make it hard.
Let it cool completely than cut with scissors strips.
Make sure it peels! Put it in Ziploc’s for freshness.
I find Stevia makes the berries tart at first but it mellows out the next day.
