**Amazing**Vegan, gluten-free, sugar-free, soy-free oatmeal cookies!!


Boy are these the best, guilt free yummies ever!!!

1 3/4 cups gluten free flour
1 cup splenda
1/4 cup ground flaxseeds
3/4 heaping cup of oatmeal
2 Tbsp cinnamon
1 1/2 tsp xanthan gum
1 tsp salt
1 tsp baking soda
1 cup olive oil
1/2 cup applesauce
2 Tbsp vanilla extract

Mix all the dry ingredients together first. Than add applesauce, olive oil and vanilla. Mix with a spoon.

Preheat oven to 325 degrees. Drop onto a cookie sheet lined with parchment paper. Spread them 1 inch apart. Bake for 8 minutes than rotate pan for another 7 minutes. Let cool.

They are so yummy!!! They are a bit crumbly but they are light, airy and so delish! They taste WAY better than they look…there being modest….. Enjoy!!
