Allergy free, vegan, apple & butternut-flax-super-food-muffins
Boy are these guys yummy! I just threw them together too!!! Even my husband and his biker freinds LOVED them!! 1/4 cup flaxseed, milled 3/4 cup rice flour 3/4 cup gluten free flour 3/4 tsp xanthan gum 1/2 cup agave sweetener 3 heaping Tbsp Brown sugar 1/2 applesauce 1, 15oz can organic butternut squash 2 tsp baking powder 1/2 tsp salt 1/2 baking soda 1 Tbsp flaxseed plus 3 Tbsp warm water. Mix together in a seperate cup let sit for 2-5 minutes for one egg replacement 3 Tbsp olive oil 1/2 cup chia seeds Preheat oven 400 degrees. Mix all the dry ingredients first really good. Than add the wet ones. Fill a cupcake tray with cupcake cups, fill batter 3/4 full. Cook for 19 minutes. Let cool and enjoy!!
