Santa cookies! Gluten-free, soy and allergy free, vegan!
1 1/2 cups oat flour
1 cup gluten free flour
1 cup sugar or Splenda
1/4 cup ground flax meal
1/4 cup of corn starch or arrowroot
1 1/2 tsp xanthan
1 tsp salt
3/4 cups plus 2 tbsp coconut or olive oil
6 Tbsp applesauce
2 Tbsp vanilla
** optional 1 cup vegan chocolate chips
Preheat oven 325 degrees,
Line two pans with parchment paper set aside.
Mix dry ingredients together than mix wet ones in.
Drop tsp sized balls of dough on parchment paper, about 1 inch apart.
Bake for 7 minutes, rotate pan and bake for 7-10 more minutes or until they are golden brown and firm. Let cool for 15 minutes before eating or icing!
