Snickerdoodles! Gluten free, vegan!

I make these for big parties and they go LIGHTNING FAST!! I practically felt like I should of handed them out instead of left them helpless on the table!!

1 1/3 cups plus 1/2 cup sugar
3 Tbsp cinnamon
2 cups rice flour
1/4 cup ground flaxseeds
1 tsp baking soda
1 tsp salt
1 tsp xanthan
3/4 cup of coconut or olive oil
1/2 cup applesauce
2 Tbsp vanilla

Preheat oven 325 degrees. Line 2 pans with parchment paper set aside.

In a bowl mix together 1/2 cup sugar and 2 Tbsp cinnamon until evenly mixed. Set aside.
Mix in seperate bowl the rest of the ingredients. Mix well. Wrap bowl and put in fridge for 1 hour.

Once the hours up. Take the dough, 1 tsp size at a time and drop in the cinnamon/ sugar mix you made. Roll around and place on pan! Give 1 inch space. Gently press balls with a fork to give them a print and help them spread.
Bake 7 minutes, rotate pan cook for 7 more. Or until they have crispy edges. Cool for 15 minutes before serving!!
