Pumpkin pie chex mix


This is a traditional recipe I changed to fit our very allergic household!
1/4 cup brown sugar
1 Tbsp pumpkin pie spice
2 Tbsp Splenda or Stevia
Mix together in a cup or small bowl and set aside

In a microwave safe bowl add:
2 cups Rice, corn, and Apple cinnamon chex (yup thats a total of 6 cups!)

1/4 cup of melted earths balance soy free butter substitute
2 Tbsp gf vanilla extract

Mix well add sugar mixture and mix well again. Microwave for 5 minutes, mixing every minute. They will basically cook and roast in there.

Lay out on foil to cool for 5 minutes than put them immediately in an airtight container! I used cupcake cups for serving!!!
