Gluten-free, allergy free Coconut cake
This cake is so easy, and moist and totally allergy free!!!
1/3 cup shredded coconut
1 1/2 cups of gluten free flour
1/2 tsp xanthan gum
1 tsp baking soda
1/2 tsp salt
3/4 cup sugar
1/2 coconut oil
1 cup coconut milk
1 tsp vanilla extract
2 tbsp apple cider vinegar
1/2 orange juice
Preheat oven to 375 degrees. Mix all the dry ingredients together first. Slowly mix in melted coconut oil and than the rest of the ingredients.
Oil a 9 inch glass pan, and pour in the batter. Cook for 30 minutes.
