Gluten-free, vegan sub bread
This was plain enough to eat alone but also easy enough to dress up.
1 1/2 cups gluten free flour
1 tsp xanthan gum
3/4 tsp salt
2 tbsp Stevia
1 packet, 1/4 oz active dry yeast granules
1 tsp olive oil
3/4 cup plus 1 tbsp hot water
Spray a loaf pan with baking spray, than sprinkle with rice flour. Set aside.
Mix all dry ingredients together, pour hot water ontop. Beat for 2 minutes.
Spoon dough into loaf pan, and let proof for 40 minutes. Than place in preheated oven 400 degrees and bake for 35-45 minutes. Until it sounds hollow when you tap it.
