Gluten-free, vegan zucchini muffin cakes!

These days I’m sure you or your family has an abundance of zucchini growing everywhere!!! Here’s a most delicious recipe that EVERYONE can LOVE. It’s so good I’m going to have to double the recipe next time.

3 cups oat flour
1 tsp baking soda
1 3/4 tsp baking powder
1 tsp salt
1 tsp cinnamon
3/4 cup warm  water with 3 Tbsp ground flaxseed ( in a separate cup, let sit for 5 minutes)
1/4 cup coconut oil
1/4 brown sugar
1/2 cup agave sweerner
1 tbsp  vanilla
2 cups raw grated zucchini

Mix together
Put in 2 loaf pans or muffin pan. Bake for 60-70 minutes. Cool for 10 minutes if you can wait!
