Allergy free pumpkin muffins!

This year I grew Amish pumpkin pie pumpkins,  and they are fun little things. But now what to do with them!?

This recipe is a staple in my home and popular year round!

2 1/2 cups of g/f oat flour ( if your in a hurry just use quick oats and skip blending them up.)
2 1/2 tsps baking powder
15 ounces pumpkin puree
3/4 tsp salt
1/2 tsp nutmeg
1 1/2 tsp cinnamon
3/4 cup applesauce
1/4 cup olive oil
1/2 cup brown sugar
1/2 cup agave sweetner
1 tsp vanilla

Preheat oven to 350 degrees.  Mix ingredients together in a bowl.  Spoon mix into muffin pan and bake for 23 minutes or until it passes the toothpick test.
Let cool if you can! And eat!
