Gluten-free, nut-free, vegan Banana Bread

Finally a completely amazing allergy free recipe! I must admit i couldn’t find a banana bread recipe so i created one! This recipe is enough for 24 muffins, and trust me they go FAST. But really feel free to cut it in half if needed.

4 mashed banana’s
1 cup coconut milk
1 cup coconut water
2/3 cup olive oil
4 Tbsp chia seeds/ or flax seeds in 1 cup water
3 cups brown rice flour
1 2/3 cups oat flour
1/2 cup honey/stevia/agava
3 tsp xanthan gum
4 tsp baking powder
1 tsp cinnamon
2 tsp salt
1/2 tsp baking soda

Preheat oven to 375 degrees. Mix the flax/or chia mix in the water as noted about and set aside. Mix all the ingredients together and add the chia/flax seed mix in at the end. Mix well and put in cupcake tins making sure they are oiled. Bake for 35 minutes and enjoy!
